Slowly but surely, it seems like winter is making its way - and few things are more important than getting your healthy vegetable "Soup on", once winter is here in full force.

Easy Italian Chicken Bake

This recipe only has 4 ingredients if you can believe it!  The prep is so minimal it almost feels like cheating.  and then the taste… well, you will just have to take my word for it.  Savor every bite!

To make this takes minutes.  Trim your chicken breast and lay them in a glass baking dish.  Spread about 1-2 tablespoons of prepared pesto (I like the Kirkland brand at Costco, but it all works!) Slice 1-2 roma tomatoes into 1/2″ thick slices and lay them on top of the pesto.  Sprinkle mozzarella (or Italian blend cheese) over the whole thing.  I like to use the Frigo mozzarella and just grate a bit for the top, but to make it even easier just use pregrated.  Bake at 400˚F for 30-40 minutes or until the chicken is cooked through and the juices run clear.

Who needs an easy and delicious dinner idea? Well, today is your lucky day! Schnitzel is one of those dishes that for some reason always seemed intimidating to me… until I made it.  Now, it is a staple at our house! This easy chicken schnitzel recipe totally fills my comfort food craving every time! In the summer months I pair it with fresh veggies or cut it into strips on a salad, and in the winter it’s great with corn and mashed potatoes! Either way, it’s a winner!

Roasted Butternut Squash Soup

I designed this traditional butternut soup to complement typical Thanksgiving fare, like green beans and mashed potatoes. (My other butternut squash soup’s Thai curry spin doesn’t play nicely with turkey.)

This version would also be a great accompaniment to grilled cheese sandwiches and salads through the end of winter. Basically, if you ever get a hankering for homemade butternut squash soup, this is the recipe for you.

I kept the ingredients list simple so the squash flavor can shine through, but the end result offers exceptionally rich flavor. All you’ll need is butternut squash, olive oil, shallot, garlic, vegetable broth, maple syrup and nutmeg.

Fritata Caprese

A four-egg frittata is great for two people, a fast and easy lunch or light dinner that needs nothing more than a simple green salad alongside. Here the flavours are inspired by the components of a Caprese salad – tomatoes, mozzarella and basil – as well as bonus flavours from the pesto: garlic, pine nuts and Parmesan cheese. Use fresh pesto from the deli to make life easier or, if you’re feeling industrious, make your own.
